Nightcrawlers Intro, Attack on the School, the entire 3rd act -- all gold.
If not for the fact that it was our "intro" to most of the greats ... Cyke, 'Ro, Logan, "The Brotherhood", etc., I likely wouldn't rank X1 as high as I do -- considering there were parts of it that were pretty cheesy.
Looking at the run times, X3 could've easily added 20~30 minutes to try and strengthen some of the character arcs... particularly those of the younger mutants (Rogue, Angel, Piotr, Kitty) -- and I'd have taken the final battle in a different direction... but there was a BIGGER feel to the third film that still worked regardless of all that. Plus, McCoy was golden. I'd argue the "Phoenix" story didn't even need to be in here, but then you'd have to remove the deaths (because having it be someone else wouldn't have had the same impact), which would negate much of that BIG component... peh?
I kind of think a Wolvie picture should've happened between X2 and X3... perhaps they'll still place it there, with lots of flashback stuff too. Makes it hard now that X3 has already happened though, as you need to keep his character come the end of the film in tone with where he was at the beginning of X3... which, to me, was a tad too soft given where I feel a Wolvie film would take the character... more peh?
End of the day, w/that box office, expect much more X-related films to come. Until they completely drive the franchise into the ground, that is. Then they'll do "special" versions of the earlier films, a TV show and probably X0. PEH.

There were scenes shot for X2 with Gambit but they were cut. He was played by a stunt man from BC.
And he's listed on Stryker's computer in X2...
