If you were in the U.S. I would recommend brands and such, but I have no idea what's available in Belgium. Still, there must be a Japanese restaurant that sells it there. Around here they have a tendency to serve it very hot, which is NOT how it's supposed to be served, and it usually means it's cheap stuff... Try to find a restaurant that serves both warmed (not hot) and cold sakés.

In Oregon you are close to the best (and only domestically owned) U.S. Sake Brewery, actually. SakéOne is in Forest Grove, OR, and they put out the Momokawa brand (look for blue bottles). Personally I like their "Ruby" which is just slightly sweet (for clear saké, that is, which really isn't sweet at all), and "Pearl", which is Nigori, or unfiltered saké, like the samurai used to drink. It is sweeter by far and has a creamy texture and color from rice sediment (which should be gently shaken in the bottle before pouring).

Saké is all about the background. It's like tasting a wine, but the flavors are usually even less obvious seeing as it comes from rice, not fruit. The ruby especially shouldn't be heated like Americans often do. Drink it slightly chilled for best results. Pearl can be chilled or room temp.

High quality saké, as I implied above, doesn't give folks hangovers. The outer part of the rice that contains most of the chemicals (congeners) is milled off, leaving a very pure beverage. Congeners are really what cause most of the headaches and such of hangovers, not the alcohol itself. Of course, avoiding dehydration by drinking something non-alcoholic helps, too.

There are other good domestically made sakés, too, and many imports leave any domestic sakés in the dust (because Japan patents and closely guards rice breeds, yeast strains, etc. However, the imports are also usually much more expensive because of both shipping and taxes levied by the U.S. Government.

All this sake talk is making me feel adventurous, I might have to try some next time I'm out for sushi. I think I'm biased against it because it looks (to my very untrained eyes) like white wine, and if I'm drinking wine I'm all about big flavours, like Australian Shiraz.

But if I'm just at home I'm all about the Southern Comfort & Coke or an Alexander Keith's.

Mostly just reading and an interest in it. When I was in Japan I very much enjoyed it and had some fine sakés, but was very ignorant about it at the time. In fact, one morning I woke up and was told that the saké that our host had intentionally gotten me smashed on was daiginjo... the very best.

So, after getting home I started reading and tasting.

I've actually ended up advising a few local liquor stores on selection, and one place wants me to hold a saké tasting (which I have done for friends, but never as a real "expert"). It feels kinda strange, but I will do it when they get their supplier to bring them the proper selection. Incidentally, it's alot easier to find good saké on the west coast. Here in Boston there are only select few places that have selections that are worth a damn, but obviously it's gaining popularity.

Bavaria. Some beer I bought that's great and cheap. In Canada is 10 bucks for a six pack of 1 pint sized cans. Imported beer for that price is unusual.
