I'll second slackware... It's not dumbed down like redhat and some of the other newer releases... More control is inherent in the installation processes and such. Being already familiar with UNIX you will likely appreciate it. It's also one of the oldest versions of linux, and has grown up alot (don't know when bligblogblah tried his install).
